Quick Tyrolean apple strudel

Our recipe to make at home

Juicy apples, fragrant cinnamon, and lots of love – the ingredients for the best Tyrolean apple strudel.

If you’ve stayed at our hotel or elsewhere in Alpbachtal in Tyrol in summer or winter, you’re sure to know and love it: Tyrolean apple strudel. So that you can enjoy this sweet temptation at home, too, we’d like to share our favourite recipe with you.

 

Ingredients

1 roll of puff pastry (alternative: homemade shortcrust pastry)

750g of apples

75g of sugar

2 tsp. of cinnamon

1 tbsp. of lemon juice

1 egg yolk for glazing

 

Preparation

Peel and core the apples, then cut them into thin slices. Put them in a bowl and mix in the sugar, cinnamon, and lemon juice. Roll out the puff pastry on a floured surface and equally spread out the apple filling on top. Now, roll the pastry starting from the long side and put it on a baking tray lined with baking paper. Beat the egg yolk with a little water and brush it onto the strudel. Bake in a preheated oven at 180°C for around 30 minutes.

Alternatively, you can cut the strudel into 2cm slices after rolling it, then place these on the prepared baking tray with one of the cut sides facing down. This helps to reduce the cooking time. The apple strudel rolls are especially popular for parties and with children.
